TUSCAN BALSAMIC CHICKEN

I’ve been preparing chicken like this for years — but have never posted the recipe all on it’s own!
The first time I made it, I didn’t even know it was a “thing.” We were staying at the beach, and knowing the groceries I could buy there were limited, I had brought along a few spices, some olive oil, and some balsamic vinegar (a staple, right my friends?!) — and when I decided to see what would happen when I cooked the chicken along with some vinegar, I was amazed by the results — an incredibly moist chicken breast, in the BEST sticky sweet glaze. Never turned back!
My love for this easy balsamic chicken was heightened recently when I received the most amazing olive oil and balsamic vinegar from Pasolivo. I connected with this company from Paso Robles because I have family in the area and know what an incredible climate and beautiful region it is.
They sent me a Tuscan Olive Oil and Tuscan Balsamic Vinegar — both incredibly high quality.
The Tuscan Balsamic has a small amount of sugar, and is complimented with blackberries and oregano. If I thought balsamic on it’s own was perfection, I don’t know what to call this! The house immediately smelled like summer when I started simmering the chicken.
An easy but extra special chicken recipe. Use this balsamic glazed chicken over a salad, on rice, or over mashed cauliflower or veggies.

INGREDIENTS
- 4 chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon sea salt more or less, to taste
- 1/2 teaspoon thyme
- black pepper to taste
- 1 cup balsamic vinegar
- semi dried tomatoes optional, garnish
- black olives optional, garnish
- fresh basil optional, garnish

INSTRUCTIONS
- Add olive oil to a skillet over medium high heat, and add chicken breasts. Season with salt, pepper, and thyme. Brown chicken on one side, and then flip.
- Lower the heat to medium low, and add balsamic chicken. Allow chicken to simmer in the vinegar, flipping the chicken a couple times to coat in the glaze. Once the vinegar has thickened and is a sticky glaze, about 20 minutes, the chicken is ready.
- Garnish with semi dried tomatoes, olives, and basil, if desired.
