Christmas Cranberry Coffee Cake Recipe


INGREDIENTS

For cake:

  1. 3 eggs
  2. 2 cups sugar
  3. ½ cup melted butter
  4. 1 teaspoon vanilla
  5. ¼ teaspoon baking soda
  6. ¼ teaspoon baking powder
  7. ½ teaspoon ground ginger
  8. Pinch of salt
  9. ½ cup buttermilk
  10. 1 tablespoon grated Orange zest
  11. 2 cups all-purpose flour
  12. ½ cup white chocolate chips
  13. 2 cups fresh cranberries or dried cranberries soaked in warm water for 20 minutes, then well drained and towel dried


For cream cheese frosting:

  1. 8 oz cream cheese, softened
  2. 1 cup powdered sugar
  3. 1 teaspoon vanilla extract


For topping:

  1. Dried cranberries, optional
  2. ½ cup white chocolate chips, melted

INSTRUCTIONS

To make the cake:

  1. Preheat oven to 350 degrees
  2. Spray 9-inch square baking pan, set aside
  3. In a medium bowl, whisk together flour, baking soda, baking powder, ground ginger and salt, set aside
  4. In the bowl of an electric stand mixer beat eggs and sugar until slightly thickened and light in color about 5-6 minutes (the mixture should almost double in size)
  5. Add melted butter, buttermilk, vanilla and grated Orange zest and mix just until combined
  6. Gradually add dry ingredients to the wet ingredients and mix just until combined
  7. Add white chocolate chips and cranberries and gently stir to mix throughout
  8. Pour batter evenly into prepared baking pan
  9. Bake for 35-40 minutes or until a toothpick inserted comes out clean
  10. Remove from oven and cool completely


To make cream cheese frosting:

  1. In a medium bowl, using an electric mixer, beat together cream cheese, powdered sugar and vanilla until smooth and well combined
  2. Spread cream cheese frosting with the spatula all over the cooled cake
  3. Sprinkle dried cranberries on top of the cake and drizzle with melted white chocolate chips
